Ingredients

  • 3 medium Ripe bananas
  • 2 cups Rolled oats
  • 1 cup All-purpose flour
  • 0.75 cup Brown sugar
  • 0.5 cup Unsalted butter (melted)
  • 1 large Egg
  • 1 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 0.75 cup Chopped chocolate chunks
  • 1.5 cups Powdered sugar
  • 2 tablespoons Heavy cream
  • 2 tablespoons Dark brown sugar (for caramel icing)
  • 2 tablespoons Unsalted butter (for caramel icing)
  • 0.5 teaspoon Vanilla extract (for caramel icing)

Directions

Step 1

Preheat the oven to 350°F (175°C). Line a 9x13-inch baking dish with parchment paper or grease it lightly with butter.

Step 2

In a large mixing bowl, mash the bananas until smooth. Add the melted butter, brown sugar, egg, and vanilla extract to the bananas, and whisk until well combined.

Step 3

In a separate bowl, whisk together the rolled oats, all-purpose flour, baking powder, cinnamon, and salt.

Step 4

Gradually fold the dry ingredients into the banana mixture. Stir until just combined, being careful to not overmix.

Step 5

Gently fold in the chocolate chunks, ensuring they're evenly distributed throughout the batter.

Step 6

Pour the batter into the prepared baking dish and smooth it out with a spatula.

Step 7

Bake in the preheated oven for 22–25 minutes, or until a toothpick inserted into the center comes out clean. Allow the bars to cool completely in the pan before adding the icing.

Step 8

While the bars are cooling, prepare the caramel icing. In a small saucepan over medium heat, combine the butter and dark brown sugar and stir until melted and combined.

Step 9

Add the heavy cream and bring the mixture to a slight boil, then reduce the heat to low and cook for an additional 2 minutes, stirring constantly.

Step 10

Remove the saucepan from the heat and whisk in the vanilla extract. Allow the mixture to cool for 5 minutes.

Step 11

Gradually whisk in the powdered sugar until the icing is smooth and thickened.

Step 12

Once the bars are completely cool, spread the caramel icing evenly over the top with an offset spatula.

Step 13

Let the icing set for 20 minutes before slicing into bars. Serve and enjoy!
