Ingredients

  • 2 cups Old-fashioned oats
  • 1.5 cups Milk (dairy or plant-based)
  • 2 large Eggs
  • 0.25 cup Maple syrup
  • 0.5 cup Unsweetened applesauce
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 1 cup Mixed berries (fresh or frozen)
  • 0.5 cup Chopped nuts (optional, such as walnuts or almonds)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x9-inch baking dish with cooking spray or a light coating of butter.

Step 2

In a large mixing bowl, combine the old-fashioned oats, ground cinnamon, baking powder, and salt, stirring until evenly mixed.

Step 3

In a separate medium-sized bowl, whisk together the eggs, milk, maple syrup, applesauce, and vanilla extract until smooth.

Step 4

Pour the wet ingredients into the bowl of dry ingredients and mix until fully combined. The mixture will be slightly runny.

Step 5

Fold in the mixed berries and chopped nuts (if using). Make sure they are evenly distributed throughout the mixture.

Step 6

Pour the oatmeal mixture into the prepared baking dish and spread it out evenly with a spatula.

Step 7

Place the dish into the preheated oven and bake for 30 to 35 minutes, or until the top is golden brown and the center is set.

Step 8

Remove the oatmeal bake from the oven and allow it to cool for 5 to 10 minutes before slicing into squares.

Step 9

Serve warm on its own or with a drizzle of milk, a dollop of yogurt, or a touch of extra maple syrup.
