Ingredients

  • 2 cups rolled oats
  • 0.5 cup almonds (chopped)
  • 0.5 cup walnuts (chopped)
  • 0.5 cup dried cranberries
  • 0.5 cup honey
  • 0.25 cup peanut butter
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 0.25 cup dark chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.

Step 2

In a large mixing bowl, combine the rolled oats, chopped almonds, chopped walnuts, and dried cranberries. Stir well to evenly distribute the ingredients.

Step 3

In a small saucepan over low heat, combine the honey, peanut butter, and brown sugar. Stir constantly until the mixture is smooth and the sugar is dissolved. Remove from heat and stir in the vanilla extract and salt.

Step 4

Pour the wet mixture over the dry ingredients in the mixing bowl. Stir everything together until all the oats and nuts are well-coated.

Transfer the mixture to the prepared baking dish. Use the back of a spoon or a spatula to press the mixture firmly and evenly into the dish. If desired, sprinkle the dark chocolate chips on top and press them gently into the mixture.
