Ingredients

  • 120 g Rolled oats
  • 300 g All-purpose flour
  • 100 g Whole wheat flour
  • 7 g Instant yeast
  • 8 g Salt
  • 40 g Honey
  • 250 ml Warm water
  • 100 ml Milk
  • 30 g Unsalted butter
  • 15 g Oats (for topping)

Directions

Step 1

In a large mixing bowl, combine the rolled oats, all-purpose flour, whole wheat flour, instant yeast, and salt. Mix thoroughly.

Step 2

In a small saucepan, warm the water, milk, honey, and butter over low heat until the butter is just melted. Ensure the mixture is lukewarm (approximately 38°C/100°F).

Step 3

Pour the wet mixture into the dry ingredients and stir until a sticky dough forms. Transfer the dough to a floured surface and knead for 8-10 minutes until the dough is smooth and slightly elastic.

Step 4

Place the kneaded dough into a lightly greased bowl, cover it with a clean damp towel, and let it rise in a warm spot for 1-1.5 hours or until it doubles in size.

Step 5

Once risen, punch down the dough and transfer it back to a lightly floured surface. Shape the dough into a loaf and place it into a greased 9x5-inch loaf pan.

Lightly brush the top of the loaf with water and sprinkle the oats evenly over the surface.

Cover the loaf pan with a clean towel and let the dough rise again for approximately 30-40 minutes until it has doubled in size again.

Preheat your oven to 190°C (375°F). Bake the loaf for 30-35 minutes, or until it is golden brown and sounds hollow when tapped.

Remove the bread from the oven and let it cool in the pan for 5 minutes. Then transfer it to a wire rack to cool completely before slicing.
