Ingredients

  • 115 grams Unsalted butter
  • 150 grams Brown sugar
  • 50 grams Granulated sugar
  • 1 large Egg
  • 2 teaspoons Vanilla extract
  • 130 grams All-purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoons Salt
  • 60 grams Oat bran
  • 120 grams Rolled oats
  • 75 grams Raisins or chocolate chips (optional)

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, beat the unsalted butter, brown sugar, and granulated sugar together until smooth and creamy.

Step 3

Add the egg and vanilla extract to the bowl, and continue mixing until well combined.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking soda, cinnamon, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until a dough begins to form.

Step 6

Fold in the oat bran and rolled oats until evenly incorporated. If using raisins or chocolate chips, gently stir them in at this stage.

Step 7

Using a tablespoon or cookie scoop, portion out dough balls and place them onto the prepared baking sheet, leaving about 2 inches of space between each cookie.

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may still look soft, but they will firm up as the cookies cool.
