Ingredients

  • 2 pounds ground beef
  • 1 yellow onion, chopped
  • 3 carrots, diced
  • 1 cup frozen green peas
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 cups mashed potatoes (store-bought or homemade)
  • 2 tablespoons butter
  • 1 cup shredded cheddar cheese (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet over medium-high heat, brown the ground beef until fully cooked, breaking it up with a spoon as it cooks. Drain any excess fat and set aside.

Step 3

In the same skillet, add the chopped onion and diced carrots. Sauté for 5-6 minutes until softened.

Step 4

Return the cooked ground beef to the skillet and stir in the frozen peas, beef broth, tomato paste, Worcestershire sauce, salt, and black pepper. Let the mixture simmer for 10 minutes, stirring occasionally, until slightly thickened.

Step 5

In a 9x13-inch baking dish, spread the meat and vegetable mixture evenly across the bottom.

Step 6

Spread the mashed potatoes evenly over the meat mixture, using a spatula to smooth the top. If desired, dot the top with butter or sprinkle with shredded cheddar cheese for extra flavor.

Step 7

Bake in the preheated oven for 25-30 minutes, or until the topping is golden and the filling is bubbling around the edges.

Step 8

Remove from the oven and let it cool slightly before serving. For freezing, let the Shepherd's Pie cool completely, wrap tightly with plastic wrap and aluminum foil, and store in the freezer for up to 3 months.

Step 9

To reheat from frozen, bake at 375°F (190°C) for 45-50 minutes or until heated through.
