Ingredients

  • 2 pounds Boneless, skinless chicken breasts
  • 2 tablespoons Taco seasoning
  • 1.5 cups Salsa
  • 1 can (15 ounces) Black beans, drained and rinsed
  • 1 can (16 ounces) Refried beans
  • 3 cups Shredded cheddar or Mexican blend cheese
  • 10 pieces Large flour tortillas
  • 1 as needed Non-stick cooking spray
  • 1 as needed (for freezer storage) Aluminum foil

Directions

Step 1

Lightly spray the inside of your crockpot with non-stick cooking spray to prevent sticking.

Step 2

Place the chicken breasts in the crockpot. Sprinkle them evenly with taco seasoning, then pour the salsa over the top.

Step 3

Cover and cook on low for 4-5 hours or until the chicken is fully cooked and tender.

Remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot and stir to combine with the salsa mixture.
