Ingredients

  • 1 pound fresh green beans, trimmed
  • 8 ounces baby bella mushrooms, finely chopped
  • 3 cloves garlic, minced
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1.5 cups chicken or vegetable broth
  • 0.75 cup heavy cream
  • 1 teaspoon soy sauce
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1.5 cups crispy fried onions
  • 1 as needed cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Spray a 9x13-inch baking dish with cooking spray and set aside.

Step 2

Bring a large pot of salted water to a boil. Add the green beans and blanch them for 4-5 minutes until crisp-tender. Drain and immediately plunge them into an ice water bath to stop cooking. Drain again and set aside.

Step 3

In a large skillet, melt the butter over medium heat. Add the chopped mushrooms and sauté for 5-6 minutes, stirring occasionally, until softened and browned.

Step 4

Stir in the minced garlic and cook for 1 minute until fragrant.

Step 5

Sprinkle the flour over the mushrooms and garlic, and stir to coat evenly. Cook the mixture for 1 minute to remove the raw flour taste.

Step 6

Gradually whisk in the chicken (or vegetable) broth and heavy cream, ensuring no lumps form. Bring the mixture to a simmer and cook for 3-4 minutes, stirring often, until thickened.

Step 7

Add the soy sauce, salt, and black pepper to the sauce, and stir well. Taste and adjust the seasoning if necessary.

Step 8

Add the blanched green beans to the skillet and toss to coat them evenly in the sauce.

Step 9

Transfer the green bean mixture to the prepared baking dish and spread it out in an even layer.

Step 10

Sprinkle the crispy fried onions evenly over the top of the green bean mixture.

Step 11

Bake the casserole in the preheated oven for 20-25 minutes, or until bubbly and golden on top.

Step 12

Remove from the oven and let it cool for 5 minutes before serving. Enjoy!
