  • 0.5 teaspoon (or to taste) Black pepper
  • 2 tablespoons (chopped) Fresh parsley (optional, for garnish)

Directions

Step 1

Peel the russet potatoes and dice them into 1/2-inch cubes. Place the diced potatoes in a large bowl of cold water to remove excess starch. Let them soak for 5-10 minutes, then drain and pat them dry with a clean kitchen towel.

Step 2

Dice the red bell pepper, green bell pepper, and yellow onion into small, even-sized pieces (about 1/2-inch). Set aside.

Step 3

In a large, heavy skillet (preferably cast iron), heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium heat until melted and shimmering.
