Ingredients

  • 12 pieces Large eggs
  • 0.33 cup Mayonnaise
  • 4 slices Pickled jalapeños
  • 1 piece Jalapeño (fresh)
  • 2 teaspoons Dijon mustard
  • 1 teaspoon White vinegar
  • 0.5 teaspoon Smoked paprika
  • 0.25 teaspoon Cayenne pepper
  • 0.25 teaspoon Sea salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Chives (fresh, chopped)
  • 1 teaspoon Hot sauce

Directions

Step 1

Place the eggs in a large pot and cover them with cold water until fully submerged. Bring the water to a boil over medium-high heat.

Step 2

Once boiling, lower the heat to a gentle simmer and cook the eggs for 10–12 minutes.

Step 3

While the eggs are cooking, prepare an ice bath by filling a large bowl with cold water and ice cubes. Once cooked, transfer the eggs into the ice bath and let them cool for 5–10 minutes.

Step 4

Peel the cooled eggs carefully and slice each in half lengthwise. Scoop out the yolks and place them in a medium-sized mixing bowl. Reserve the egg whites on a serving platter.

Step 5

Using a fork, mash the egg yolks into a fine crumble. Add the mayonnaise, pickled jalapeños, Dijon mustard, white vinegar, smoked paprika, cayenne pepper, sea salt, black pepper, and hot sauce. Mix thoroughly until the filling is creamy and smooth.

Step 6

Taste the yolk mixture and adjust seasoning or heat by adding more cayenne pepper or hot sauce, if desired.

Step 7

Finely dice half of the fresh jalapeño and fold it into the yolk mixture for an extra kick. Save the other half for garnishing.

Step 8

Transfer the yolk mixture into a piping bag with a star tip (or use a spoon for a rustic approach). Gently pipe or spoon the mixture into the hollowed egg whites, generously filling each one.

Step 9

Garnish each deviled egg with a thin slice of fresh jalapeño, a sprinkle of smoked paprika, and a few chopped chives for a vibrant presentation.

Step 10

Refrigerate the deviled eggs for at least 30 minutes before serving to let the flavors meld. Serve chilled and watch them disappear!
