  • 1 lb Large shrimp, peeled and deveined
  • 12 oz Spaghetti
  • 4 oz Pancetta, diced
  • 4 Egg yolks
  • 1 cup Grated Parmesan cheese
  • 3 cloves Minced garlic
  • 2 tbsp Olive oil
  • 2 tbsp Butter, unsalted
  • 2 tbsp Fresh parsley, chopped
  • 1 tsp Salt
  • 0.5 tsp Black pepper, freshly ground
  • 0.25 tsp Red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

Step 2

In a small bowl, whisk together the egg yolks and grated Parmesan cheese until combined. Set aside.

Step 3

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add the diced pancetta and cook until crispy, about 5 minutes. Remove the pancetta to a plate using a slotted spoon, leaving the fat in the skillet.

Step 4

Add the remaining tablespoon of olive oil and the minced garlic to the skillet. Sauté for about 30 seconds, until fragrant.
