Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 cup unsalted mixed nuts (e.g., almonds, cashews, walnuts)
  • 1 small onion
  • 2 garlic cloves
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon ground turmeric
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear. Drain well and set aside.

In a medium saucepan, bring 2 cups of water to a boil. Add the drained rice, cover, and reduce the heat to low. Let it cook for 12-15 minutes or until the rice is tender and the water is absorbed. Remove from heat and fluff with a fork.

While the rice cooks, chop the onion finely and mince the garlic cloves. Set them aside.
