Ingredients

  • 2 cups Rolled oats
  • 1 cup All-purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoons Ground nutmeg
  • 0.5 teaspoons Salt
  • 0.5 cup Unsalted butter, softened
  • 0.75 cup Brown sugar, packed
  • 0.25 cup Granulated sugar
  • 0.5 cup Pure pumpkin puree
  • 1 large Egg
  • 1 teaspoon Pure vanilla extract
  • 0.75 cup Chopped pecans or walnuts
  • 0.5 cup Semi-sweet chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the rolled oats, all-purpose flour, baking soda, cinnamon, nutmeg, and salt. Set aside.

Step 3

In a large bowl, use a mixer to cream the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes.

Step 4

Beat in the pumpkin puree until well combined, followed by the egg and vanilla extract.

Step 5

Gradually add the dry ingredients into the wet ingredients, mixing just until combined. Do not overmix.

Step 6

Fold in the chopped nuts and chocolate chips (if using) with a spatula.

Step 7

Scoop tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. The centers may still look slightly soft.

Step 9

Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.

Step 10

Store the Nutty Pumpkin Oaties in an airtight container at room temperature for up to one week.
