Ingredients

  • 2 cups Almond milk
  • 0.5 cup Chia seeds
  • 3 tablespoons Maple syrup
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Cinnamon
  • 0.25 cup Almonds
  • 0.25 cup Walnuts
  • 0.25 cup Pecans
  • 1 pinch Salt

Directions

Step 1

In a large mixing bowl, combine almond milk, chia seeds, maple syrup, vanilla extract, cinnamon, and salt. Whisk everything together until well combined.

Step 2

Cover the bowl with a plastic wrap or lid and place it in the refrigerator to set for at least 4 hours or preferably overnight, allowing the chia seeds to absorb the liquid and the mixture to thicken.

Step 3

Roughly chop almonds, walnuts, and pecans and toast them in a dry pan over medium heat for 2-3 minutes, or until they are golden brown and fragrant. Stir occasionally to prevent burning.

Step 4

Once the pudding has set, give it a good stir to break up any clumps.

Step 5

Divide the pudding evenly into four serving bowls or jars.

Step 6

Top each serving with a generous sprinkle of chopped toasted nuts.

Step 7

Serve immediately or cover and keep in the refrigerator for up to 3 days.
