Ingredients

  • 120 grams Creamy peanut butter
  • 60 grams Tahini (sesame paste)
  • 60 grams Unsalted butter, softened
  • 100 grams Brown sugar
  • 50 grams Granulated sugar
  • 1 unit Large egg
  • 1 teaspoon Vanilla extract
  • 140 grams All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 40 grams Sesame seeds (white or black)

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the creamy peanut butter, tahini, and softened butter. Mix until smooth and creamy.

Step 3

Add the brown sugar and granulated sugar to the mixture, and beat until well incorporated and fluffy.

Step 4

Crack in the egg and add the vanilla extract. Mix until fully combined.

Step 5

In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

Step 6

Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Be careful not to overmix.

Step 7

Using a tablespoon or small cookie scoop, portion out the dough into 18 equal balls.

Step 8

Pour the sesame seeds into a shallow bowl. Roll each dough ball in the sesame seeds, ensuring they're evenly coated.

Step 9

Place the sesame-coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart. Gently press down each cookie to slightly flatten.

Step 10

Bake in the preheated oven for 9–11 minutes, or until the edges are set but the centers remain soft.

Step 11

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 12

Serve and enjoy these nutty, soft cookies as a delightful treat!
