Ingredients

  • 150 g unsalted butter
  • 100 g light brown sugar
  • 4 tbsp golden syrup
  • 250 g rolled oats
  • 100 g mixed nuts (e.g., almonds, hazelnuts, walnuts)
  • 50 g dried cranberries (optional)
  • 1 tsp vanilla extract
  • 1 pinch of salt

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a 20cm x 20cm (8in x 8in) square baking tin with parchment paper.

Step 2

In a medium saucepan, melt the butter, light brown sugar, and golden syrup over low heat, stirring occasionally until smooth and well combined.

Step 3

Remove the saucepan from the heat and stir in the vanilla extract and a pinch of salt.

Finely chop the mixed nuts and add them to a large mixing bowl along with the rolled oats and dried cranberries (if using). Mix well.
