Ingredients

  • 2 lbs chicken wings
  • 0.5 cup all-purpose flour
  • 2 tbsp cornstarch
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 4 cups vegetable oil
  • 0.25 cup unsalted butter
  • 0.5 cup hot sauce (e.g., Frank's RedHot)
  • 2 tbsp honey
  • 0.25 cup crushed peanuts (or choice of nuts)
  • 2 tbsp chopped green onions
  • 0 optional ranch dressing or blue cheese dressing (for serving)

Directions

Step 1

Pat the chicken wings dry with paper towels. If wings are whole, use a sharp knife to separate the drumettes and the wingettes at the joint, discarding the tips if desired.

Step 2

In a large bowl, mix the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and smoked paprika. Toss the chicken wings in the flour mixture until evenly coated. Shake off excess flour and set aside on a wire rack for 10-15 minutes to allow the coating to adhere.

Step 3

Heat the vegetable oil in a deep pan or fryer to 375°F (190°C). Carefully fry the chicken wings in batches, being careful not to overcrowd the pan. Cook each batch for 8-10 minutes, or until golden brown and fully cooked with an internal temperature of 165°F (74°C). Remove the wings and let them rest on a wire rack to drain excess oil.

Step 4

While the wings are frying, prepare the Buffalo sauce. In a small saucepan, melt the unsalted butter over low heat. Stir in the hot sauce and honey, mixing until well combined and smooth. Remove the sauce from heat.

Step 5

Once all wings are fried, place them in a large bowl. Pour the Buffalo sauce over the wings and toss until evenly coated.

Step 6

Transfer the coated wings to a serving platter. Sprinkle the crushed peanuts on top for a nutty crunch, followed by the chopped green onions for a fresh garnish.

Step 7

Serve immediately with ranch or blue cheese dressing on the side for dipping. Enjoy your nutty Buffalo wings!
