Ingredients

  • 8 ounces Tortilla chips (baked, multigrain)
  • 1 cup Black beans (canned, rinsed and drained)
  • 1 cup Shredded cheddar cheese (low-fat)
  • 1 cup Diced tomatoes
  • 0.5 cup Diced red onion
  • 1 whole Diced avocado
  • 0.5 cup Corn kernels (fresh, frozen, or canned and drained)
  • 3 tablespoons Fresh cilantro leaves (chopped)
  • 0.5 cup Greek yogurt (plain, non-fat)
  • 1 tablespoon Lime juice
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Ground chili powder
  • 0.25 teaspoon Salt
  • 1 whole Jalapeño (optional, thinly sliced)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Line a baking sheet with parchment paper or aluminum foil for easy cleanup.

Step 3

Spread the tortilla chips evenly across the baking sheet.

Step 4

Sprinkle the black beans and shredded cheddar cheese evenly over the chips.

Step 5

Place the baking sheet in the preheated oven and bake for 8-10 minutes, or until the cheese is melted and bubbly.
