Ingredients

  • 500 ml Whole milk
  • 3 large Eggs
  • 50 g Granulated sugar
  • 1 tsp Vanilla extract
  • 0.5 tsp Ground nutmeg
  • 1 pinch Salt

Directions

Step 1

Preheat your oven to 150°C (300°F).

Step 2

In a medium saucepan, gently heat the milk over low heat until it's warm but not boiling. Remove it from the heat and set aside.

Step 3

In a large mixing bowl, whisk together the eggs, granulated sugar, vanilla extract, and a pinch of salt until fully combined and frothy.

Step 4

Slowly pour the warmed milk into the egg mixture, whisking continuously to avoid cooking the eggs.

Step 5

Strain the mixture through a fine-mesh sieve into a large jug or bowl to remove any lumps.

Step 6

Pour the mixture evenly into four individual ramekins or custard cups.

Step 7

Place the ramekins into a deep baking dish and pour boiling water into the dish until it reaches halfway up the sides of the ramekins.

Step 8

Sprinkle a pinch of ground nutmeg evenly over the top of each custard.

Step 9

Carefully transfer the baking dish to the preheated oven and bake for 40-45 minutes, or until the custards are just set with a slight jiggle in the center.

Step 10

Remove the ramekins from the water bath and let them cool to room temperature. Then, chill in the refrigerator for at least 2 hours before serving.

Step 11

Serve chilled or at room temperature. Optionally, garnish with a light dusting of extra nutmeg.
