Ingredients

  • 200 grams Almond flour
  • 100 grams Ground mixed nuts (walnuts, hazelnuts, or pecans)
  • 150 grams Sugar (or coconut sugar for refined sugar-free)
  • 100 grams Butter (softened)
  • 4 large Eggs
  • 1 teaspoon Vanilla extract
  • 2 teaspoons Baking powder (gluten-free)
  • 0.25 teaspoon Salt
  • 50 milliliters Milk (or plant-based alternative)
  • 30 grams Chopped nuts (for topping, optional)

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease an 8-inch (20cm) round cake pan, lining the bottom with parchment paper.

Step 2

In a large mixing bowl, cream together the softened butter and sugar until light and fluffy using a hand or stand mixer.

Step 3

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Step 4

In a separate bowl, mix the almond flour, ground mixed nuts, gluten-free baking powder, and salt.

Step 5

Gradually fold the dry ingredients into the wet ingredients, alternating with the milk until everything is combined into a smooth batter.

Step 6

Pour the batter into the prepared cake pan, spreading it evenly with a spatula. Optionally, sprinkle chopped nuts on top for added texture.

Step 7

Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Step 8

Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Step 9

Slice and serve as-is or with a dollop of whipped cream or yogurt for an extra treat. Enjoy!
