  • 0.5 medium Red onion
  • 2 cloves Garlic cloves
  • 2 tablespoons Cilantro (fresh, chopped)
  • 0.25 cup All-purpose flour (or gluten-free flour if needed)
  • 0.5 cup Breadcrumbs (nut-free, or gluten-free if needed)
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil

Directions

Step 1

Begin by peeling the potatoes and carrots. Boil them in a pot of water until soft, approximately 10-12 minutes. Drain and let cool slightly.

Grate the boiled carrots and zucchini into a large mixing bowl. Mash the boiled potatoes and add them to the same bowl.

Roughly mash the chickpeas using a fork or potato masher, leaving some texture, and add them to the mixing bowl.
