  • 0.5 cup Sugar
  • 1 tablespoon Cornstarch
  • 4 pods Cardamom pods (crushed, or substitute with ground cardamom)
  • 10 strands Saffron strands
  • 1 teaspoon Rose water

Directions

Step 1

In a heavy-bottomed pot, bring the full-fat milk to a boil over medium heat, stirring frequently to prevent it from sticking to the bottom.

Step 2

Once the milk reaches a boil, reduce the heat to a simmer, and continue to cook, stirring occasionally, until it reduces to half its original volume. This should take approximately 30-35 minutes.

Step 3

While the milk is simmering, dissolve the cornstarch in 2 tablespoons of warm water or milk to create a smooth slurry. Set aside.

Step 4

Add the sugar, crushed cardamom pods, and saffron strands to the reduced milk, stirring well to combine. Let the mixture simmer for another 5 minutes.

Slowly add the cornstarch slurry to the milk, stirring continuously to avoid lumps. Cook for another 5-8 minutes, or until the mixture thickens to a custard-like consistency.
