Ingredients

  • 1 cup White sesame seeds (til)
  • 0.75 cup Jaggery (grated or powdered)
  • 2 tablespoons Water
  • 0.25 teaspoon Cardamom powder (optional)
  • 1 teaspoon Ghee (clarified butter) or vegan coconut oil (optional for shaping)

Directions

Step 1

Heat a large, heavy-bottomed pan on medium heat. Add the sesame seeds and dry roast them while stirring continuously for 4–5 minutes, or until they turn light golden and emit a nutty aroma. Transfer the roasted seeds to a plate and let them cool completely.

Step 2

In the same pan, add the jaggery and water. Heat on low-medium until the jaggery dissolves completely, stirring occasionally. Strain the jaggery syrup if there are impurities.

Step 3

Return the jaggery syrup to the pan and cook until it reaches the 'soft ball' stage. To test, drop a small amount of the syrup into a bowl of cold water. If it forms a soft, pliable ball, it’s ready. Turn off the heat.

Step 4

Quickly add the roasted sesame seeds and cardamom powder (if using) to the jaggery syrup. Mix thoroughly until the seeds are evenly coated.

Step 5

Let the mixture cool for 1–2 minutes, just enough to handle safely. Apply a bit of ghee or coconut oil to your palms to prevent sticking.

Step 6

While the mixture is still warm, take small portions and shape them into round laddus by rolling them between your palms. Work quickly before the mixture hardens.

Step 7

Allow the laddus to cool completely at room temperature. Once set, they can be stored in an airtight container for up to 2 weeks.
