Rinse the sushi rice thoroughly under cold water in a mesh sieve to remove excess starch. Continue rinsing until the water runs clear.
Combine the rinsed rice and 2.5 cups of water in a rice cooker. Cook the rice according to your rice cooker’s instructions. If you’re using a stovetop, bring the water to a boil, reduce heat to low, cover, and let it simmer for 18-20 minutes. Then allow the rice to rest, covered, for an additional 10 minutes off the heat.
While the rice cooks, prepare the sushi seasoning. In a small saucepan, heat the rice vinegar, sugar, and salt over low heat, stirring occasionally until the sugar and salt dissolve. Remove from heat and allow to cool.
Transfer the cooked rice to a large, shallow bowl or tray to cool slightly. Drizzle the sushi seasoning evenly over the sticky rice and gently fold it in with a wooden or silicone spatula. Avoid mashing the rice. Cover the rice with a damp towel to keep it moist and let it cool to room temperature.
Prepare your filling ingredients. Cut the cucumber into julienned strips, slice the avocado, and, if using, prepare the cooked salmon or tuna slices. Set aside all the fillings and cooked shrimp or crab sticks.
Cut each nori sheet in half to create rectangular pieces that are easier to roll by hand.
Lay a sheet of the rectangular nori on your work surface, shiny side down. Place about 2 tablespoons of sushi rice on the left side of the nori. Spread it out with wet fingers, leaving an inch of space on the top and bottom for easier rolling.
Add your preferred fillings diagonally across the rice. For example, layer a strip of cucumber, a slice of avocado, and a piece of shrimp or crab stick.
Fold the bottom left corner of the nori over the fillings, forming a cone shape. Continue wrapping the nori around the rice and fillings until it forms a hand roll. Seal the edge with a small dab of water if needed.
Repeat the process with the remaining nori sheets, rice, and fillings.
