Ingredients

  • 4 medium (about 500 grams) Tomatoes
  • 2 tablespoons Vegetable oil
  • 1 medium, finely chopped Onion
  • 3 cloves, minced Garlic
  • 1 teaspoon, grated Fresh ginger
  • 1 teaspoon Cumin seeds
  • 2 small, finely chopped (adjust to taste) Green chilies
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon (or to taste) Salt
  • 1 teaspoon Sugar
  • 2 tablespoons, finely chopped Coriander leaves
  • 1 tablespoon Lime juice

Directions

Step 1

Wash the tomatoes thoroughly and cut them into rough chunks.

Step 2

Heat the vegetable oil in a pan over medium heat.

Step 3

Once the oil is hot, add the cumin seeds and let them sizzle for a few seconds until aromatic.

Step 4

Add the finely chopped onion and sauté for 3-4 minutes until golden brown.

Step 5

Stir in the minced garlic, grated ginger, and chopped green chilies. Cook for another 1-2 minutes until fragrant.

Step 6

Add the turmeric powder and red chili powder. Stir well to combine and cook for 30 seconds.

Step 7

Add the chopped tomatoes along with the salt and sugar. Mix everything well.

Step 8

Cover the pan and cook on medium-low heat for 10-12 minutes, stirring occasionally, until the tomatoes soften and break down completely.

Using a masher or the back of a spoon, mash the tomatoes to achieve a chutney-like consistency.

Taste and adjust the seasoning if needed. Add the lime juice and mix well.

Turn off the heat and garnish with finely chopped coriander leaves.
