Ingredients

  • 500 g Sponge gourd (ridge gourd)
  • 2 tbsp Oil (vegetable or sunflower)
  • 1 tsp Cumin seeds
  • 1 tsp Mustard seeds
  • 1 medium Onion, finely chopped
  • 2 medium Tomatoes, chopped
  • 3 Garlic cloves, minced
  • 1 tsp Ginger, minced
  • 0.5 tsp Turmeric powder
  • 0.5 tsp Red chili powder (adjust to taste)
  • 1 tsp Coriander powder
  • 1 tsp Cumin powder
  • 1 tsp Salt
  • 0.5 cup Water
  • 2 tbsp Fresh cilantro (coriander leaves), chopped

Directions

Step 1

Peel the sponge gourd and cut it into bite-sized cubes. Set aside.

Step 2

Heat the oil in a large pan or skillet on medium heat.

Step 3

Add the cumin seeds and mustard seeds to the hot oil. Let them sizzle for 30 seconds until aromatic.

Step 4

Add the finely chopped onion to the pan. Sauté for 3-4 minutes until the onion turns golden and translucent.

Step 5

Stir in the minced garlic and ginger. Sauté for another 1-2 minutes until fragrant.

Add the chopped tomatoes to the pan. Cook for 4-5 minutes, stirring occasionally, until the tomatoes break down and form a thick paste.
