Ingredients

  • 10 oz Frozen chopped spinach
  • 2 large Eggs
  • 1 cup Breadcrumbs
  • 0.5 cup Grated Parmesan cheese
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 for greasing Olive oil spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly grease it with olive oil spray.

Step 2

Thaw the frozen chopped spinach according to package instructions. Once thawed, squeeze out as much excess water as possible using a clean kitchen towel or paper towels.

Step 3

In a large mixing bowl, beat the eggs until combined.

Step 4

Add the squeezed spinach, breadcrumbs, grated Parmesan cheese, onion powder, garlic powder, salt, and black pepper to the bowl. Mix well until all ingredients are evenly incorporated.

Step 5

Using clean hands, shape the mixture into 1-inch balls and place them on the prepared baking sheet, spaced evenly apart.

Step 6

Lightly spray the spinach balls with olive oil to help them crisp up during baking.

Step 7

Bake in the preheated oven for 18-20 minutes, or until the spinach balls are firm and lightly golden on the outside.

Step 8

Remove from the oven and allow to cool slightly before serving. Enjoy warm as an appetizer, snack, or side dish!
