Ingredients

  • 300 grams dried wheat noodles (or egg noodles for non-vegan option)
  • 2 tablespoons vegetable oil
  • 4 cloves garlic cloves, minced
  • 1 teaspoon fresh ginger, minced
  • 4 stalks green onions (white and green parts separated), chopped
  • 1 teaspoon Szechuan peppercorns, ground
  • 1 teaspoon chili flakes
  • 3 tablespoons soy sauce
  • 1 tablespoon Chinese black vinegar (or balsamic vinegar as a substitute)
  • 2 tablespoons hoisin sauce (ensure nut-free)
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 2 tablespoons water or vegetable broth
  • 1 as desired optional toppings: sesame seeds, sliced chili, or additional green onions

Directions

Step 1

Cook the dried noodles according to the package instructions. Once cooked, drain and rinse under cold water to stop cooking. Toss with a few drops of sesame oil to prevent sticking, and set aside.

Step 2

Heat the vegetable oil in a large skillet or wok over medium heat.

Step 3

Add the minced garlic, ginger, and the white parts of the chopped green onions. Stir-fry for 1 to 2 minutes until fragrant, taking care not to burn the garlic.

Step 4

Add the ground Szechuan peppercorns and chili flakes to the skillet, and cook for an additional 30 seconds to release their aroma.

Step 5

In a small bowl, whisk together the soy sauce, Chinese black vinegar, hoisin sauce, sugar, sesame oil, and water or vegetable broth to make the sauce.

Step 6

Pour the prepared sauce into the skillet and stir well. Let it simmer for 1 to 2 minutes to slightly thicken.

Step 7

Add the cooked noodles to the skillet and toss to coat them evenly with the sauce. Cook for another 2 to 3 minutes, stirring frequently, until the noodles are heated through and infused with the flavors.

Step 8

Turn off the heat, and garnish the noodles with the green parts of the green onions and any optional toppings like sesame seeds, sliced chili, or additional green onions.

Step 9

Serve hot and enjoy your homemade nut-free spicy garlic Szechuan noodles!
