Ingredients

  • 250 grams All-purpose flour
  • 50 grams Semolina
  • 3 tablespoons Ghee
  • 0.25 teaspoons Salt
  • 180 milliliters Water
  • 200 grams Grated coconut
  • 150 grams Jaggery
  • 0.5 teaspoons Cardamom powder
  • 1 tablespoons Poppy seeds

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, semolina, and salt. Gradually add water and mix until you form a soft dough. The consistency should be smooth but not sticky. Cover the dough and let it rest for at least 20 minutes.

Step 2

In a saucepan over low heat, melt the jaggery until it dissolves into a syrup. Add the grated coconut, cardamom powder, and poppy seeds to the saucepan. Cook, stirring continuously, until the mixture thickens slightly and becomes fragrant. This will take about 8-10 minutes. Allow the filling mixture to cool completely.

Step 3

After the dough has rested, divide it into 12 equal portions and roll each portion into a ball.

Roll each dough ball into a small circle, about 4 inches in diameter, on a lightly floured surface.

Place about 1 tablespoon of the filling in the center of the rolled dough. Fold the dough over the filling in a half-moon shape, and gently press the edges to seal them. You can use a fork to crimp the edges for a decorative finish.

Heat the ghee in a wide pan over medium heat. Fry the sochen in batches, turning occasionally, until golden brown and crisp, about 3-4 minutes on each side.
