Ingredients

  • 500 grams fresh green beans
  • 1 large red bell pepper
  • 2 tablespoons olive oil
  • 3 large garlic cloves
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.5 teaspoons dried oregano
  • 1 tablespoon lemon juice
  • 2 tablespoons water

Directions

Step 1

Wash and trim the green beans by removing the stem ends, and then cut them into approximately 2-inch pieces.

Step 2

Core and thinly slice the red bell pepper into strips.

Step 3

Peel and finely chop the garlic cloves.

Step 4

Heat the olive oil in a large sauté pan over medium heat.

Step 5

Once the oil is hot, add the chopped garlic and sauté for about 1 minute until fragrant, making sure not to burn it.

Step 6

Add the sliced red bell pepper and sauté for 3-4 minutes, stirring often, until they start to soften.

Step 7

Add the green beans to the pan, along with salt, black pepper, and dried oregano. Stir well to combine.

Step 8

Pour the 2 tablespoons of water into the pan to help steam the green beans. Cover the pan with a lid and allow everything to cook for 5-7 minutes, stirring occasionally, until the green beans are tender but still crisp.

Step 9

Remove the lid and increase the heat slightly. Sauté for another 2-3 minutes to evaporate any remaining water and to give the vegetables a slight char.

Step 10

Remove from heat and drizzle with lemon juice. Stir to distribute the lemon juice evenly.

Step 11

Taste and adjust seasoning if necessary. Serve immediately.
