Ingredients

  • 500 grams Chicken thighs
  • 200 ml Coconut milk
  • 3 tablespoons Soy sauce
  • 2 tablespoons Brown sugar
  • 2 teaspoons Ground coriander
  • 1 teaspoon Turmeric powder
  • 3 units Garlic cloves, minced
  • 1 unit Lemon grass stalk, finely chopped
  • 2 tablespoons Lime juice
  • 1 teaspoon Salt
  • 2 tablespoons Vegetable oil
  • 10 units Wooden skewers, soaked in water
  • 3 tablespoons Kecap manis (Indonesian sweet soy sauce)
  • 1 teaspoon Chili flakes (optional)

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and set aside.

Step 2

In a large mixing bowl, combine coconut milk, soy sauce, brown sugar, ground coriander, turmeric, minced garlic, and finely chopped lemongrass. Stir well to mix all ingredients.

Add the chicken pieces to the marinade, ensuring each piece is well coated. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 1 hour or overnight for a more intense flavor.

Preheat the grill or a grill pan over medium-high heat.
