Ingredients

  • 1 pound Boneless, skinless chicken thighs
  • 0.25 cup Soy sauce
  • 0.5 cup Coconut milk
  • 3 tablespoons Fresh lime juice
  • 2 tablespoons Honey
  • 3 teeth Garlic cloves, minced
  • 1 tablespoon Ginger, grated
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Ground turmeric
  • 0.5 teaspoon Ground cumin
  • 2 tablespoons Oil
  • 0.5 teaspoon Red chili flakes
  • 0.5 teaspoon Salt
  • 1 medium Cucumber, sliced for serving
  • 8 pieces Metal or wooden skewers

Directions

Step 1

If using wooden skewers, soak them in water for at least 30 minutes prior to grilling to prevent burning.

Step 2

Cut the chicken thighs into 1-inch cubes and set aside.

Step 3

In a large bowl, whisk together soy sauce, coconut milk, lime juice, honey, minced garlic, grated ginger, ground coriander, ground turmeric, ground cumin, oil, red chili flakes, and salt to create the marinade.

Step 4

Add the chicken pieces to the marinade and stir until they are well coated. Let it marinate for at least 30 minutes in the refrigerator for the best flavor; however, marinating for up to 2 hours is preferable.

Step 5

Preheat your grill or grill pan over medium-high heat.

Step 6

Thread the marinated chicken pieces onto skewers evenly, leaving a little space between each piece for even cooking.

Step 7

Place the skewers on the grill and cook for about 12-15 minutes, turning occasionally, until the chicken is fully cooked and charred on the edges.

Step 8

While the chicken is cooking, prepare the cucumber slices for serving.

Step 9

Remove skewers from the grill and serve hot alongside the fresh cucumber slices for a refreshing contrast.

Step 10

Enjoy your nut-free satay chicken skewers with an extra squeeze of lime, if desired!
