  • 4 pieces Boneless, skinless chicken breasts
  • 1 can (20 oz) Canned pineapple chunks
  • 0.25 cup Soy sauce
  • 0.25 cup Honey
  • 3 pieces Garlic cloves
  • 1 tablespoon grated Ginger, fresh
  • 2 tablespoons Olive oil
  • 1 tablespoon Cornstarch
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 stalks Green onions
  • 1 large Red bell pepper
  • 2 cups cooked White or brown rice

Directions

Step 1

Begin by draining the pineapple chunks, reserving 1/4 cup of the juice for later use.

Step 2

Cut the chicken breasts into bite-sized pieces and season them with salt and black pepper.

Step 3

Finely mince the garlic cloves and chop the green onions and red bell pepper into thin slices.

Step 4

In a medium bowl, mix the reserved pineapple juice with soy sauce, honey, grated ginger, and cornstarch until well combined. Set aside.
