Ingredients

  • 4 large eggs
  • 2000 ml water
  • 500 ml cold water

Directions

Step 1

Fill a large pot with 2000ml of water and bring it to a boil over medium-high heat.

Step 2

Once the water is boiling, remove the pot from the heat and let it cool for 5 minutes. This will reduce the water temperature to around 80°C.

Step 3

Meanwhile, prepare a bowl filled with 500ml of cold water.

Step 4

Carefully add the 4 large eggs to the hot water in the pot, ensuring they are fully submerged.

Step 5

Cover the pot with a lid and let the eggs sit undisturbed in the hot water for exactly 13 minutes.

Step 6

After 13 minutes, gently transfer the eggs into the prepared cold water bath using a slotted spoon. This helps stop the cooking process and makes the eggs easier to handle.

Step 7

Allow the eggs to cool in the cold water bath for about 2 minutes.

Step 8

Carefully crack each egg into a small bowl and let the white and yolk slide out gently. Nestle them into the serving dishes of your choice.

Step 9

Serve the onsen eggs immediately, seasoned with salt or soy sauce and garnished with chopped green onions, if desired.
