Ingredients

  • 3 large Onions
  • 150 grams Chickpea flour (besan)
  • 120 ml Water
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Chili powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground pepper
  • 0.5 teaspoon Baking powder
  • 2 tablespoons Fresh coriander leaves, chopped
  • 500 ml Vegetable oil (for frying)

Directions

Step 1

Peel and slice the onions thinly, then separate the rings to ensure even cooking.

Step 2

In a large mixing bowl, combine chickpea flour, cumin seeds, ground coriander, turmeric powder, chili powder, salt, ground pepper, and baking powder.

Step 3

Gradually add water to the dry ingredients, whisking constantly to form a smooth, lump-free batter. The batter should be thick enough to coat the back of a spoon.

Step 4

Add the sliced onions and chopped fresh coriander leaves to the batter and mix well until the onions are coated evenly.

Step 5

Heat vegetable oil in a deep frying pan or wok over medium-high heat. The oil should be approximately 1-2 inches deep for frying.

Step 6

To test if the oil is hot enough, drop a small amount of batter into the oil; it should sizzle and rise to the surface immediately.

Step 7

Carefully drop spoonfuls of the onion mixture into the hot oil, being careful not to overcrowd the pan. Fry the bhajis in batches for about 3-4 minutes on each side or until golden brown and crisp.

Step 8

Remove the bhajis from the oil using a slotted spoon and drain them on a plate lined with paper towels to absorb excess oil.

Step 9

Serve the nut-free onion bhajis hot with your favorite chutney or dipping sauce.
