Ingredients

  • 1 cup Rolled oats
  • 0.5 cup Sunflower seed butter
  • 10 pieces Medjool dates, pitted
  • 2 tablespoons Chia seeds
  • 0.25 cup Pumpkin seeds (pepitas), unsalted
  • 0.25 cup Unsweetened shredded coconut
  • 3 tablespoons Cocoa powder
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 2 tablespoons Honey or maple syrup

Directions

Step 1

In a food processor, combine the rolled oats, sunflower seed butter, Medjool dates, chia seeds, pumpkin seeds, shredded coconut, cocoa powder, vanilla extract, salt, and honey or maple syrup.

Step 2

Pulse the mixture together until it is well combined and forms a sticky dough. If the mixture is too dry, add a little more sunflower seed butter or a splash of water.

Step 3

Scoop out approximately 1 tablespoon of the mixture and roll it between your hands to form a ball. Repeat this process until all of the mixture is used, yielding about 16 energy balls.

Step 4

Place the energy balls on a baking sheet or plate and refrigerate them for at least 30 minutes to set.
