Directions

Step 1

Preheat your oven to 220°C (425°F).

Grease four 6-ounce ramekins with butter, then dust with cocoa powder, tapping out any excess.

In a double boiler, or a heatproof bowl set over a pan of simmering water, melt 110 grams of unsalted butter and 170 grams of dark chocolate together. Stir until smooth and well combined. Remove from heat and let it cool slightly.

In a separate bowl, whisk together 3 large eggs, 150 grams of granulated sugar, 1 teaspoon of vanilla extract, and 0.25 teaspoon of salt until the mixture is light and fluffy.
