Ingredients

  • 2 cups Black-eyed peas
  • 2 medium Red bell peppers
  • 1 large Onion
  • 1 Scotch bonnet pepper
  • 1 cup Vegetable oil
  • 2.5 cups Water
  • 2 teaspoons Salt
  • 1 tablespoon Chicken bouillon powder
  • 1 cup Smoked mackerel (optional)
  • 1 for wrapping Banana leaves or aluminum foil

Directions

Step 1

Place the black-eyed peas in a large bowl and cover with water. Allow them to soak for at least 20 minutes to loosen the skins.

Step 2

Drain the beans and rub them between your hands to remove the skins. Rinse and drain several times until most of the skins are removed.

Step 3

In a blender, combine the peeled beans, red bell peppers, onion, and scotch bonnet pepper. Add the 2.5 cups of water and blend until smooth and creamy.

Step 4

Pour the blended mixture into a large mixing bowl. Add the vegetable oil, salt, and chicken bouillon powder, stirring until everything is well combined.

If using smoked mackerel, flake it into the bean mixture and stir to distribute evenly.

Prepare the banana leaves by cutting them into manageable pieces and boiling them briefly to make them pliable. Alternatively, cut pieces of aluminum foil for wrapping.

Spoon the moi moi mixture onto each piece of leaf or foil, fold or wrap them securely, and place them in a large pot for steaming.

Add water to the pot, just enough to create steam but not touch the wrapped moi moi, and place a steaming rack at the bottom.
