Ingredients

  • 200 g Rice vermicelli
  • 200 g Chicken breast, thinly sliced
  • 1 medium Carrot, julienned
  • 100 g Cabbage, shredded
  • 1 medium Bell pepper, thinly sliced
  • 100 g Bean sprouts
  • 2 stalks Spring onions, chopped
  • 2 cloves Garlic, minced
  • 3 tbsp Soy sauce
  • 2 tbsp Oyster sauce
  • 1 tsp Sesame oil
  • 2 tbsp Vegetable oil
  • 0.5 tsp Salt
  • 0.25 tsp Ground white pepper

Directions

Step 1

Start by soaking the rice vermicelli in warm water for about 10 minutes until they soften. Drain and set aside.

Step 2

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the minced garlic and stir-fry for about 30 seconds until fragrant.

Step 3

Add the thinly sliced chicken to the wok and stir-fry until cooked through, approximately 5 minutes. Remove the chicken from the wok and set aside.

Step 4

In the same wok, add the remaining 1 tablespoon of vegetable oil. Add julienned carrot, shredded cabbage, and bell pepper. Stir-fry for about 3-4 minutes until the vegetables are slightly softened.

Step 5

Return the cooked chicken to the wok, along with the bean sprouts and chopped spring onions. Stir to combine all the ingredients well.

Add the soaked and drained rice vermicelli to the wok. Pour in the soy sauce, oyster sauce, sesame oil, salt, and ground white pepper. Toss everything together until the noodles are evenly coated with the sauce and heated through.

Continue stirring the mixture for another 2-3 minutes, ensuring all the ingredients are well combined and the noodles are heated thoroughly.
