Ingredients

  • 2 cans (14 oz each) Canned artichoke hearts
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 0.5 small Red onion
  • 0.5 cup Kalamata olives
  • 1 medium Red bell pepper
  • 0.75 cup Feta cheese
  • 0.25 cup Fresh parsley
  • 0.25 cup Olive oil
  • 3 tablespoons Lemon juice
  • 1 clove Garlic
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Drain the canned artichoke hearts and rinse them in cold water. Pat them dry with a paper towel and cut each heart into quarters.

Halve the cherry tomatoes. If using larger tomatoes, cut them into bite-sized pieces.
