Ingredients

  • 500 grams Rice noodles
  • 1 can (400 grams) Canned river snail soup base
  • 200 grams Bamboo shoots
  • 50 grams Fermented tofu
  • 100 grams Pickled mustard greens
  • 100 grams Dry tofu skin
  • 4 cloves Garlic
  • 30 grams Ginger
  • 50 ml Chili oil
  • 50 ml Soy sauce
  • 30 ml Vinegar
  • 100 grams Bean sprouts
  • 3 stalks Green onions
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Prepare all the ingredients: rinse the bamboo shoots and cut them into thin slices, mince the garlic, and thinly slice the ginger and green onions.

Step 2

In a large pot, bring 2 liters of water to a boil. Add the rice noodles and cook according to package instructions until tender. Drain and set aside.

In another pot, empty the canned river snail soup base and bring it to a simmer over medium heat.

While the soup base is heating, sauté garlic and ginger in a pan with a tablespoon of oil over medium heat until fragrant, about 2 minutes.
