Ingredients

  • 4 cups Kale leaves
  • 2 cups Napa cabbage
  • 1 large Carrot
  • 1 medium Red bell pepper
  • 1 medium Cucumber
  • 2 stalks Green onion
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 tablespoon Honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Chia seeds

Directions

Step 1

Start by preparing the kale. Wash and thoroughly dry the kale leaves. Remove the tough stems and chop the leaves into bite-sized pieces. Place them in a large salad bowl.

Step 2

Next, prepare the napa cabbage. Wash and dry the leaves, then slice them thinly to yield about 2 cups. Add to the bowl with the kale.

Peel the carrot and use a grater to shred it. Add the shredded carrot to the salad bowl.

Wash the red bell pepper. Remove the stem and seeds, then cut it into thin strips. Add these to the salad.
