Ingredients

  • 400 grams All-purpose flour
  • 7 grams Instant yeast
  • 30 grams Granulated sugar
  • 7 grams Salt
  • 200 milliliters Whole milk
  • 40 grams Butter
  • 1 Egg
  • 1 liter Vegetable oil
  • 100 grams Panko breadcrumbs
  • 1 medium Onion, chopped
  • 1 small Carrot, diced
  • 1 small Potato, diced
  • 2 cloves Garlic, minced
  • 100 grams Ground beef or pork
  • 200 milliliters Water
  • 2 tablespoons Curry powder
  • 2 tablespoons Soy sauce
  • 2 tablespoons All-purpose flour (for thickening)
  • 2 tablespoons Water (for slurry)

Directions

Step 1

In a small saucepan, warm the milk and butter until the butter melts. Set aside to cool to a lukewarm temperature.

Step 2

In a large bowl, combine 400g of flour, 7g of yeast, 30g of sugar, and 7g of salt. Mix well.

Step 3

Add the lukewarm milk mixture and one beaten egg to the dry ingredients. Mix until a dough forms.

Step 4

Knead the dough for about 10 minutes until smooth and elastic. Cover with a damp cloth and let it rise in a warm place for about 1 hour, or until doubled in size.

Step 5

Meanwhile, make the curry filling. Heat a skillet over medium heat and sauté the chopped onion, carrot, potato, and minced garlic until the vegetables are softened.

Add the ground meat and cook until browned.

Stir in 2 tablespoons of curry powder, 2 tablespoons of soy sauce, and 200ml of water. Let it simmer for about 5 minutes.

To thicken, mix 2 tablespoons of flour with 2 tablespoons of water to make a slurry, and add it to the curry. Stir until thickened, then let the mixture cool.

After the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a ball and flatten slightly.

Place a spoonful of the curry mixture in the center of each dough piece, fold over and seal tightly.

Coat each filled dough with water, then roll in panko breadcrumbs to cover completely.

Heat vegetable oil in a deep fryer or deep pan to 180°C (350°F).

Fry each curry bread until golden brown and crispy on all sides, approximately 3–4 minutes.

Drain on paper towels to remove excess oil and serve warm.
