Ingredients

  • 250 grams Tapioca flour
  • 60 grams All-purpose flour
  • 3 cloves Garlic, finely minced
  • 1 teaspoon White pepper powder
  • 1 teaspoon Salt
  • 250 milliliters Chicken stock
  • 2 tablespoons Vegetable oil
  • 2 tablespoons Sweet soy sauce
  • 2 tablespoons Ketchup
  • 1 tablespoon Chili sauce (optional)

Directions

Step 1

In a mixing bowl, combine tapioca flour and all-purpose flour. Set aside.

Step 2

In a separate saucepan over medium heat, bring the chicken stock to a gentle boil. Add minced garlic, white pepper powder, and salt to the stock. Stir until well mixed.

Step 3

Pour the hot chicken stock mixture into the bowl containing the flour mixture gradually, stirring continuously until it forms a dough.

Step 4

Allow the dough to cool slightly, then knead it gently with hands until you achieve a smooth texture.

Step 5

Once cooled enough to handle, divide the dough into small bite-sized balls, about 1 inch in diameter.

Step 6

Prepare a steamer and bring the water to a boil. Arrange the dough balls on the steamer basket, leaving space between each ball.

Step 7

Steam the tapioca balls for 15 minutes or until they become translucent and fully cooked.

Step 8

While the cilok is steaming, in a small bowl, mix sweet soy sauce, ketchup, vegetable oil, and optional chili sauce to prepare the dipping sauce.

Step 9

Serve the steamed cilok hot with the sauce on the side for dipping. Enjoy your nut-free Indonesian cilok!
