Ingredients

  • 2 cups Rice flour
  • 2.5 cups Water
  • 0.5 teaspoon Salt
  • 1 teaspoon Sesame oil

Directions

Step 1

In a medium saucepan, bring 2.5 cups of water to a rolling boil over high heat. Add the salt and sesame oil to the boiling water.

Step 2

Once the water has boiled, reduce the heat to low and gradually add the rice flour while stirring continuously to prevent lumps.

Step 3

Mix the flour and water thoroughly until it forms a smooth, soft dough-like consistency. Ensure there are no dry spots of flour.

Step 4

Turn off the heat and allow the mixture to cool enough to handle, but while it is still warm.

Step 5

Take small portions of the dough and fill it into a string hopper or sevai/idiyappam maker.

Step 6

Press down the mixture through the maker in a circular motion to create noodle-like strings onto a greased idli plate or a steaming tray lined with cheesecloth.

Step 7

Repeat until all the dough is used, and make sure the strings do not overlap too thickly to ensure even cooking.

Step 8

Arrange the filled idli plates in a steamer. Use a pot with a steaming rack or a dedicated idli steamer.

Step 9

Cover and steam the idiyappam over medium heat for about 10-12 minutes, until set and cooked through. Avoid overcooking to maintain the light texture.

Step 10

Once done, remove from the steamer and gently transfer the idiyappams to a serving plate using a flat spatula.

Step 11

Serve hot with coconut milk-based curries, vegetable stew, or chutneys.
