Ingredients

  • 2 cups plain Greek yogurt
  • 3 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped
  • 0.5 cup fresh blueberries
  • 1 cup granola (nut-free)
  • 0.5 cup unsweetened shredded coconut

Directions

Step 1

Line an 8x8 inch square baking dish with parchment paper, ensuring excess paper hangs over the sides for easy removal later.

Step 2

In a medium-sized mixing bowl, combine the Greek yogurt, honey, and vanilla extract. Stir until well-blended and smooth.

Step 3

Spread the yogurt mixture evenly across the bottom of the prepared baking dish using a spatula or the back of a spoon.

Step 4

Evenly distribute the chopped strawberries and blueberries over the top of the yogurt mixture.

Step 5

Sprinkle the granola and shredded coconut evenly over the berries, pressing gently with your hands to ensure it adheres to the yogurt.

Step 6

Cover the dish with plastic wrap or foil and place it in the freezer. Freeze for at least 4 hours, or until fully set.

Step 7

Once set, use the overhanging parchment paper to lift the yogurt block out of the dish. Place it on a cutting board.

Step 8

Using a sharp knife, cut the yogurt block into bars of your desired size, usually about 8 bars.

Step 9

Store the bars in an airtight container in the freezer. Allow them to sit at room temperature for a few minutes before serving for the best texture.
