Ingredients

  • 3 cups Old-fashioned rolled oats
  • 1 cup Unsweetened shredded coconut
  • 0.5 cup Sunflower seeds
  • 0.5 cup Pumpkin seeds
  • 0.5 cup Maple syrup
  • 0.25 cup Coconut oil, melted
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Cinnamon
  • 0.25 teaspoon Salt
  • 0.5 cup Dried cranberries
  • 2 cups Greek yogurt
  • 1 cup Fresh strawberries, sliced
  • 1 cup Fresh blueberries
  • 1 cup Fresh raspberries

Directions

Step 1

Preheat your oven to 325°F (160°C) and line a large baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the oats, shredded coconut, sunflower seeds, and pumpkin seeds.

Step 3

In a small saucepan over low heat, combine the maple syrup and melted coconut oil. Stir until the ingredients are well combined and smooth. Remove from heat and stir in the vanilla extract, cinnamon, and salt.

Step 4

Pour the liquid mixture over the dry oat mixture, stirring until everything is well coated.

Step 5

Spread the granola mixture evenly across the prepared baking sheet and bake in the preheated oven for 20-25 minutes, stirring halfway through, until it's golden brown and fragrant.

Step 6

Remove the granola from the oven and let it cool completely on the baking sheet, as it will continue to crisp up.

Step 7

Once cooled, mix in the dried cranberries.

Step 8

To serve, divide the Greek yogurt equally among bowls. Top each serving with a generous helping of the homemade nut-free granola.

Step 9

Finish by adding fresh strawberries, blueberries, and raspberries on top.

Step 10

Serve immediately and store any leftover granola in an airtight container at room temperature for up to two weeks.
