Ingredients

  • 3 cups Rolled oats
  • 1 cup Pumpkin seeds
  • 0.5 cup Sunflower seeds
  • 0.5 cup Unsweetened shredded coconut
  • 0.5 cup Dried cranberries
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.5 cup Coconut oil
  • 0.5 cup Maple syrup
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 325°F (163°C) and line a large baking sheet with parchment paper.

In a large mixing bowl, combine the rolled oats, pumpkin seeds, sunflower seeds, shredded coconut, dried cranberries, ground cinnamon, and salt. Stir well to mix the dry ingredients evenly.

In a small saucepan over low heat, melt the coconut oil. Once melted, remove from heat and stir in the maple syrup and vanilla extract until well combined.
