Ingredients

  • 3 cups Old-fashioned rolled oats
  • 1 cup Unsweetened shredded coconut

  • 0.5 cup Sunflower seeds
  • 0.5 cup Dried cranberries
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.5 cup Maple syrup
  • 0.25 cup Canola oil
  • 1 teaspoon Vanilla extract
  • 0.5 cup Dried apricots, chopped

Directions

Step 1

Preheat the oven to 350°F (175°C) and line a large baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, shredded coconut, pumpkin seeds, sunflower seeds, ground cinnamon, and salt. Stir to mix well.

Step 3

In a small saucepan over low heat, combine the maple syrup, canola oil, and vanilla extract. Stir continuously until the mixture is warm and thoroughly combined.

Pour the warmed liquid mixture over the dry ingredients in the large bowl. Stir until all the dry ingredients are evenly coated.
