Ingredients

  • 1 cup raw sunflower seeds
  • 1 cup water
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons nutritional yeast
  • 1 tablespoon tamari or soy sauce
  • 1 large garlic clove
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 0.25 teaspoon cayenne pepper
  • 0.5 teaspoon salt

Directions

Step 1

Begin by adding the raw sunflower seeds to a medium bowl and cover them with water. Set aside to soak for at least 1 hour or up to overnight for the best results.

Step 2

After soaking, drain and rinse the sunflower seeds thoroughly under cold water.

Step 3

In a high-speed blender or food processor, combine the soaked and drained sunflower seeds with 1 cup of fresh water.

Step 4

Add the olive oil, lemon juice, nutritional yeast, tamari or soy sauce, garlic clove, ground cumin, paprika, cayenne pepper, and salt to the blender or food processor.

Step 5

Blend the mixture on high speed until it becomes smooth and creamy. You may need to stop and scrape down the sides occasionally to ensure all ingredients are well incorporated.

Step 6

Taste the sauce and adjust the seasoning to your preference. You might want a bit more salt or lemon juice for additional acidity.

Step 7

Transfer the sauce to an airtight container and refrigerate for at least 30 minutes before serving to let the flavors meld. The sauce will thicken slightly as it chills.

Step 8

Serve the nut-free Bitchin' Sauce as a dip for vegetables, a spread for sandwiches and wraps, or as a sauce for grains and salads.
